Happy Thursday everyone!
So the good news of today is that we got a new windshield, there’s still about $300 worth of damage, unfortunately though. That winter storm really really messed us up, but that’s okay; we will survive, we always do!
On Thursday’s on stream and on the blog we remake some of the old recipes from the original Momnoms’ blog before we moved over here to beehiiv. We did amazing brussel sprouts 2 weeks ago; which is one of my favorite recipes that ever went viral!
This week, I’m sharing the first recipe that I EVER created by myself. Cajun Alfredo! While I have changed the recipe every few years or made it to where anyone could eat it; I have stayed pretty true to the original recipe.

This cajun alfredo combines spicy, savory, and cheesy to make something that everyone is going to love. It’s easy to customize with your favorite toppings so that even the pickiest eater will eat it!
Cajun Alfredo
Items needed
Medium-Large pot
Sauce pot
Frying pan
Whisk
Spoon
Sieve
Chef’s knife
Measuring spoons/cups
Ingredients
½ zucchini; sliced
1 red bell pepper; sliced
½ cup of asiago cheese (can be subbed with parm for a softer taste or pepper jack for a spicier taste)
2 tbs AP flour
4 tbs unsalted butter; split in half
1-2 cups milk (or cream depending on how thick you want the sauce)
½ cup franks red hot (can be less if you don’t like spice much)
2 tbs cajun seasoning
1 tbs garlic
½ tsp nutmeg
1 tsp chili powder
¼ tsp red pepper chili flakes
1 tsp ground thyme
Salt and pepper to taste
1 package of your favorite pasta; cooked how you want it
Your favorite toppings (I will include my favorites at the bottom)
Recipe
In your medium-large pot; put water in and start heating to cook your pasta
In the sauce pan over a medium-low heat put ½ your butter in and let slowly melt
Whisk in the flour until a roux forms, let the roux cook until a caramel color (~3-4min)
Add your milk(or cream) and all of the seasoning and mix until it is combined(~2min)
Add your hot sauce and bring the heat up to medium until it starts to simmer
After the sauce simmers, bring down to a low heat and whisk in the cheese
While your sauce is simmer add the other butter to your frying pan over a medium-high heat
Add in your vegetables and sautee with your favorite ingredients; I add salt, pepper, garlic, and chili powder
During this time you can also throw in your other toppings. I just add shrimp and andouille and cook until both are cooked through and the zucchini and peppers have a little char on them
Serve your sauce over your pasta with your toppings! I like bread with it too because this sauce is severely addicting!
Some great customizations for your family could be:
Adjusting the heat levels up or down.
Adding different proteins; shrimp, andouille, chicken, and pork area great choices, but shrimp is definitely my favorite
If you’re a vegetarian; add in a few more vegetables! Brussel sprouts, more peppers, carrots, and asparagus are some of my favorites!
If you DO add chicken, I highly recommend grilling it with hot honey (this also works for shrimp.) It gives a nice sweet flavor that balances well with the spiciness of the pasta!
Hot honey shrimp is the perfect topping for this cajun alfredo! It gives it a little bit of sweetness to help balance the spicy that comes from the sauce!
