Happy Wednesday! We are a little stressed out around here. It seems to be no matter how much we work on things, something always comes up and makes us fall 3 steps back. But I honestly have so much hope and faith in myself that we will make it through everything. It’s just a little hard sometimes.
On Wednesday’s we do viral recipes and I try to make them make more sense than just food waste. I am always convinced that people save some of these dishes and don’t really make them, but because they saved them, they become more popular.
We took zucchini and made a cream pasta that has no cream and if you take the butter out, it’s also vegan! Just 1-1 with your favorite oil! I think you’re really going to like this bright summer dish!
Just a few tips; use whatever pasta that you like, we used egg noodles and they were amazing with it. I also suggest using a few carrot strips to really make it sweet, although the husband says it turns it from summer until fall. If you don’t have a sieve, it’s okay, just know that your dish will be a little chunkier.
