Happy Thursday! I hope that you all are having an amazing week so far. I cannot believe that the week (and month) is almost over. It has been crazy, busy, and full of having kiddo home for the summer. Sorry that the blog and everything took a hit for it, but I like to spend as much time as I can with kiddo.
We did a Taco Bell dupe because we were also talking about the parasite that has been going around. I have been trying to help my community to navigate vegetables since all of this started. I feel like it’s always something, but I guess that is what you get when your government guts the part of the government that handles food safety. Just a few tips; you can absolutely use regular store bought tortillas, I made homemade ones because I… forgot to get tortillas at the store. They’re easy to make at home though 3C flour, 1C water, 2 tbs baking powder, a pinch of salt, and 5 tbs of room temperature butter. Mix until a ball forms, cover with a wet cloth, let rise for 10 minutes, and then separate out, flatten with a tortilla press or your rolling pin, and then cook on each side over medium heat for 1-2 minutes.
