What’s in the box? Is the catfish raw or cooked? Will we ever know?

Hello my fellow food lovers looking for something interesting to cook for dinner.

We have power again, it’s more stable than it was a couple of days ago, but it’s still not back on for everyone. This Nashville storm did damage to millions and has barely been spoken a bout and that is honestly really sad to me.

I will speak more on what we are doing to get back on our feet after the storm at the end; I know yall are really here for the food!

I asked my kiddo if I should post what is on my schedule or do a sponsored post real quick that I made in the middle of the 6 days we didn’t have power. They said normal post because it’s so weird.

Super Animal Royale’s Schrodinger’s Catfish

You start with a savory cookie and you put your gingerbread making skills into play!

Item’s Needed

  • Either a hand mixer or a stand mixer

  • Baking pan

  • Chef’s knife

  • Cake Scraper

  • Square cookie cutter (optional)

  • Offset spatula

Ingredients

  • ½ cup shredded cheddar cheese

  • 4 oz softened unsalted butter

  • ½ lemon zested

  • 1 tbs dried rosemary

  • ½ tbs dried thyme

  • 1 tsp red pepper chili flakes

  • 1 tbs sugar

  • ½ tsp salt

  • ½ tsp pepper

Directions

  • Pre-heat oven to 350ºF

  • Combine all ingredients thoroughly until it forms a sand-like consistency

  • Knead it all together

  • Put on a baking pan and use the cake scrapper to make it as flat as possible

  • Cook for 20 minutes or until it has golden edges

  • Cut into 6 equal squares

Catfish

Items needed

  • Sharp chef’s knife

  • Mixing bowl

  • Frying pan or cast iron pan

Ingredients

  • 1 lb of catfish; skinned, cleaned, and chopped

  • 2 garlic cloves; minced

  • ¼ yellow onion; diced

  • 1 head of broccoli

  • 4 potatoes; sliced and boiled; split in 1/2

  • 1 tsp garlic powder

  • 1 tsp dried thyme

  • 1 lemon juiced

  • ½ tsp red pepper flakes

  • 4 tbs butter; split

  • ¼ cup cream; split

  • salt and pepper to taste

Directions

  • Split your potatoes in half; mash half with a little salt, pepper, garlic powder, 1tbs of butter, and ½ of the cream. Mash until it is a paste like consistency

  • In a frying pan place 1tbs of butter and fry the rest of the potatoes with a little salt and pepper; set aside

  • In a frying pan place the rest of the oil and put in the catfish; fry on each side for about 90 seconds

  • Add in the broccoli and the rest of the seasoning and lemon juice; cook for another 2-3 minutes or until your broccoli is bright green and still has a crunch

  • Take fish and broccoli out and put in the cream and whisk until smooth

To serve

  • Use your potato paste to put together the box

  • Add your fried potatoes to the bottom, followed by your broccoli, followed by your fish and drizzle with the cream sauce
