Hello everyone,

This weekend we had a lovely catering event! It went so well and we had so much fun doing it. In fact, we loved it so much that we are recreating a few of the dishes on the Cooking Show tomorrow!

Today we went back to our struggle meals, but we are doing them a little different since it’s getting so hot outside for so many people. So we are doing summer time struggle and comfort meals; thing to help keep you cool when you can’t afford to go out to eat.

I LOVE pasta salad, but Producer Red hates it. He hates it so much that I knew exactly how he would react to getting cold pasta, ‘this would be better warm.’ That’s it, that was all. But if you like pasta salad like I do, you’ll love this one!

A little history on this dish; we do not really know where this stemmed from. It could either be a spin off of cold rice dishes brought to Italy from the Silk Road or it could be a dish that Jewish people in Italy made on Sabbath because it was easy to prepare and keep cold; they didn’t have to work to make it!

However we do know that in the 1960s American’s went crazy for it, even making macaroni salad; pasta salads much less attractive and tasty little cousin.

It more than likely because popular because more women were in the workforce and were not home to always cook. They needed something easy that they could just leave in the fridge for people to eat later.

Just a few tips; if you made too much pasta one day this week, use that instead of cooking pasta. Pasta salad is amazing because you can literally make it however you want and add whatever you want. Don’t want the roasted veg? That’s fine, add raw veg. Don’t like the dressing? Cool, add some salt and pepper and oil. This dish is for what you have and what you want it to taste like!
