I hope you all are having a great Wednesday. I feel like I am running behind on everything. We are always so busy that my head feels like it’s spinning. I am pushing so hard to make sure that there is content on here, while filming it on Twitch and updating on social media. I feel like this is harder than any marketing or cooking job that I have ever had.
I appreciate all of the subscriptions, follows, likes, and everything else! You guys have seriously made this come-back such an enjoyable experience.
We are making mayak eggs which means dr*g eggs. They’re called that because they are so good you will want to eat more. However, in a lot of Korea right now, they are trying to rebrand these eggs to not include the word dr*g because of their anti-dr*g push that they’ve had over the last several years.
The other thing that is happening is that people are making these eggs and calling them what they aren’t, Courtney’s Eggs. CourtneyCooks is a big food creator who loves asian food, but when she creates recipes or makes them, she tends to lose track of where they come from and why they are here. While it makes the food more accessible to other cultures, for places like Korea where food means love, it feels more like appropriation than appreciation.
I understand that so much. It’s a hard, but thin line to figure out what is appropriation and what is appreciation. I think the biggest part is that as a person from a different culture, you shouldn’t say that this is something you made up. Because you didn’t. You may change a couple of things for your tastes, but you need to give credit where and when it is deserved.
Eggs are a staple for Koreans because for a long time Koreans were being occupied by one country or another (and yes, America counts in this since they’re one of the reasons that Korean is divided into north and south regions.) Mostly because eggs are a cheap source of protein when you do not have access to many other things. They made their eggs their own by adding different seasonings and really making it enjoyable instead of something you just stuff in your mouth because you’re hungry.
Mayak eggs are great over potatoes or rice or just by themselves; they are a flavor bomb on your tongue.
Mayak Eggs and Potato Jeon
Items Needed
2 large mixing bowls
chef’s knife
Sauce pot
Frying pan
Ingredients
6 eggs, room temp
3 cups water
1 cup soy sauce
3 tbs brown sugar
1 onion diced; split in half
2 tbs sesame seeds
1 zucchini julliened
3 potatoes julliened
3 cloves garlic; minced; split in half
4 red or green chili peppers minced
3 stalks green onion, chopped
2 tbs olive oil
3 tbs tempura powder
1 tbs chili powder
salt and pepper to taste
Mayak Egg Recipe
Bring water to a light simmer
Add eggs for 6.5 minutes
When finished put in a bowl of ice in order to stop cooking
While the eggs are cooling mix: soy sauce, brown sugar, half the onion, sesame seeds, half the garlic, peppers, and green onion
Peel and add the eggs into the mixture; chill in fridge for at least 2 hours
Potato Jeon Recipe
Place julliened potatoes in a bowl of water for at least 20 minutes and then dry
Mix potatoes, rest of onion and garlic, seasoning, and the tempura powder
Heat olive oil over a medium heat
Press potato/zucchini mixture into the frying pan
Cook on each side for about 7 minutes or until golden brown
Serve with kimchi, mayak eggs, or eat by themselves!
