Hello everyone,

Welcome to another week with Momnoms! I had a good small break, but I am starting to feel the fact that I am working so much. I literally just want to sleep right now. What do you guys do to beat the sleepy?

I created this recipe about a month ago when I had NO IDEA what to do with the leftover corn that we had from the 4th of July bbq. I wanted to make elote, but also wanted to make it a full meal. There are a lot of elote pasta salad, but unfortunately Producer Red does not eat pasta salad, so I just went to the kitchen and started coming up with a recipe. I finally perfected it, so now I am sharing it with you!

Just a few tips; this is a nearly completely customizable dish. We ate it with no meat because we tend to not eat much meat in our house, but shrimp or bacon or even chicken would taste really good in this dish! If you don’t like cilantro, make sure to add a little more lime to get that bright flavor from it. Grilled corn tastes way better, but feel free to make the corn in whatever way you want to!
