Hello everyone,
This is my white whale recipe. The one that has always just gotten away without being any closer to figuring it out. Until I did. Well mostly.
The Casa Olé Green Sauce; which is one of the best chain sauces to ever exist. Many days in my youth I spent, sitting and just eating this sauce, would order nothing else, just this sauce. Why? Because the green sauce at Casa Ole is the best sauce that I have ever put my mouth on in my life.
Now that I have moved out of Texas (for nearly 20 years of not living in Texas lol) I have tried to make it on my own and I always fail at it. But I found an old reddit posts where a few ex-Casa Ole employees were making fun of the recipes, so I figured out what to not add. And then… I came up with this recipe. It’s WONDERFUL!

Just a few tips; you do not have to sieve it, but it does make it taste a lot better and not feel as grainy as you would get pulsing a bunch of vegetables together!
