Not only is it a regular Tuesday; happy Lunar New Year AND Mardi Gras to all who celebrate! I feel like it is a great time to post food content because both of these holidays center around amazing food and community AND if you’ve been around awhile, you know that we believe that food shows love, culture, and community! If you are celebrating today, I hope that you have an amazing day full of wonderful food and amazing family around you!
We are on our next part of making a cookbook for the video game Super Animal Royale. We decided to base this one off of our good friend Meltan, who is a content creator for SAR and a super big part of the community. He is a shark in game, but we don’t really want to cook a shark, so let’s just pretend that the tuna that we use is a shark.
This is a great brunch if you’re looking for something a little bit different without being too outlandish. Think of it as if you have crab cakes, but something a little more affordable.
A few things to look out for when you’re cooking this; don’t put the heat too high on the tuna cakes or on the crumpets; this can cause it to completely break down and burn. This is definitely not what you’re looking for when making food.
You can add any vegetables that you like as a topper for this dish, but we used yellow peppers because the sweetness of the pepper really brings out the sweetness of the fish.
When tempering your eggs make sure that your butter is hot and melted, but add it in very slowly or else you will get some major scrambling going on. When making hollandaise you can customize it how you want, but the basis of it will always stay the same: 1:1 on egg yolk and butter; if you use 2 egg yolks, add 2 tbs of melter butter, etc. Dijon mustard gives it a little twang and add as little or as much lemon juice as you want. I tend to add a little more as I love tangy hollandaise.
Finally, if you’ve never poached an egg; I do not suggest swirling the water or putting vinegar in it. When you crack your egg get as close to the water as you can without burning yourself and just drop it in. Do NOT touch it for 3 minutes; it will release from the bottom without issues itself and you don’t tamper with the flavor.
Spicy Tuna Cake Egg Benedict
Items Needed
2 Large mixing bowls
1 Smaller mixing bowl or a quart cup
Stand mixer (or hand mixer or even a whisk)
Immersion blender (or a regular blender or a whisk)
Frying pan
Small pot
Pasta spoon (or a slotted spoon)
Chef’s Knife
Spatula
Measuring cup and spoon
Ingredients Needed
Tuna Cakes
1 can of tuna, drained
1 tbs chili powder
1 tbs garlic powder
¼ tsp cayenne
Salt and pepper to taste (I use about 1 tbs salt and 2 tbs pepper)
¼ cup flour (I used tempura flour for the crisp)
2 tbs butter (for cooking)
Hollandaise
2 tbs butter; melter
2 egg yolks
1 tsp dijon mustard
2 tsp lemon juice
2 tbs chili powder
¼ tsp cayenne
1 tbs garlic powder
Salt and pepper to taste
Poached Egg
3 cups of water; simmering (just under a boil)
1 egg
Crumpet
1 cup flour
¾ cup warm water
Pinch of salt
1 tbs sugar
2 tsp baking powder
1 packet of instant dry yeast (about 2 1/3 tbs and make sure it is INSTANT)
2 tbs butter (for cooking)
Recipe
Tuna Cakes
Mix all ingredients in a large mixing bowl with a large fork until thoroughly mixed
Over medium low heat add butter
Brown each side for 2-3 minutes or until golden brown
Let rest for 2 minutes
Hollandaise
Mix eggs, dijon, lemon juice, and spices
Slowly use an immersion blender to mix the hollandaise while pouring in the butter until thick and creamy
Poached Eggs
Bring a small pot of water to a simmer
Crack eggs as close to the water as you can get, making sure you gently put the egg in the water
Leave it absolutely alone for 3 minutes
Use a pasta spoon or a slotted spoon to pull egg out
Crumpet
In a stand mixer or with a hand mixer; mix all the ingredients
Set aside for 10-15 minutes or until bubbly
Over a medium low heat melt butter
Using a measuring cup, put the mixture in a frying pan
Cook each side for 4-5 minutes or until fluffy and golden
Just put everything on top of each other and you have a fancy brunch in no time!
