I had a catering event last night, so yesterday’s post is running a little bit late; which makes my posts from today very late. So sorry, but sometimes we need to pivot a little bit in order to get everything done that we want to get done!
It has been an amazing week talking about the Silk Road. I love older food history because so much of it is contested. No one really knows the real place that things come from. And there are AMAZING stories from it. For example, with Lagman there is an old wive’s tale in China that makes me laugh every time that I read about it.
A little history on this dish; this Lagman is also super contested. There are stories of it coming from Persia on the Silk Road and China on the Silk Road, but the one thing that we really do know is that it is a dish that very much grew with the Silk Road.
In China they have a story that 3 merchants met on a cross road; one was carrying meat, one was carrying flour and eggs, and one was carrying vegetable. They were hungry and tired and did not know what to do, so one of them who knew how to cook took the supplies and made it into a soup; which was Lagman.
Also in China, they believe that Lagman means love. If you share it with people it means that you are spreading your love and your good graces towards them.
However; there was a dish in Persia that was very similar to Lagman as well; it’s name translated to ‘slippery’ because of the texture that the noodles get.
I believe that it comes from China and moved to the Middle East through the Silk Road during the mass migration of Muslims out of China to find a place that they could call home and eventually settled in Persia.
In Persia, I think that it began to flourish with the spices that they could find in the Middle East and with the trade routes being right there.
Each region has different versions of Lagman and even helped to create Lasagne in Italy in the 1500s.
Just a few tips; you can buy the noodles and just make the soup if you need to, however making the noodle is really fun and something you can do with the whole family. I did a vegetarian style Lagman, however if you want to make it with meat you can cook the meat with the onions and use it as your soup base. If you want it more like a stir fry eliminate the water and just add an oil to fry up the noodles, veggies, meat, and spice.
