Hello everyone!
I hope that you guys are ready for the weekend! My brain has not really been working today, I think that’s what happened when you’re stressed out of your mind. Like, do you ever just get to a point where you have no idea how you’re going to do it? Like, how are you going to make it?
I hate that when I started this blog in 2015 (over on squarespace) the world was so different. I had way more optimism. Right now, I feel like I’m just losing all optimism for life.
I don’t mean to rant, it’s just been one of those days and yall probably know how it feels, especially if you’re a parent or an adult.
Well, now into the food! We are doing something really fun and super easy to make during the weekdays when you have absolutely no time. We are all out here trying to save money anyway, so those days when we would rather order food out, doing something that barely takes time is definitely the way to go.
You can also serve it with braised cabbage, bread, or any kind of veggies!
This one pot, instant pot Swedish meatballs will help you get through the week with something a little tasty
Instant Pot Swedish Meatballs
Items Needed
Instant Pot
Measuring cup
Wooden Spoon
Cheese grater
Ingredients Needed
1lb ground beef
4 cloves garlic; minced and split in half
½ onion; minced
¼ cup flour
2 tbs butter (or your oil of choice)
¼ lb mushrooms chopped
1 bag egg noodles
3 tbs Worcestershire sauce
1 cup vegetable stock
½ cup milk (or cream if you want it creamier)
½ cup sour cream
½ cup grated parm
1 tbs chili powder
½ tbs dried sage
1 tsp nutmeg
1 tbs garlic powder
Salt and pepper to taste
Recipe
Mix ½ garlic, beef, flour, salt and pepper and form into balls
Turn your Instant Pot on to Saute and add your oil
Put in garlic, onion, and mushrooms; saute for about 1 minute
Put the meat balls in and saute on each side for about 30 seconds
Pour in ½ of your vegetable stock and use your wooden spoon to scrape the bits off the bottom
Turn off saute and add your seasoning and egg noodles; on top of that add the ret of your stock and Worcestershire sauce
Put on high pressure for ½ of the time that your bag says to do it on the stove
If it says 6 minutes, put it in for 3 minutes
When the Instant Pot is done cooking, turn it back on saute and add in milk, cheese, and sour cream until it’s smooth
Serve with cabbage or veggies!
