Hello everyone,
I’m back from the catering event from hell. I spoke about it on the Cooking Show on Sunday, so I implore you to go and give it a little watch. This is not how you treat chefs or any service working. Do not mess with the hand that feeds you.
Anyway, we are back to posting. Producer Red is helping me more with the blog and uploading videos now, so I should have enough time to get out a few blog posts a week for you guys! (You might get one every day soon!)
We are also going to attempt to get the posts out as soon as the show is done so that people can quickly make what we make on stream! (You will also have the first version of the recipe every Monday before the show starts that week!)
A little history on this dish; We are not completely sure the first person who made this. But there are records that the Aztecs would soak their fried, stale, tortillas in ‘chile water,’ which is basically what this dish is!
We do see women who derived from the sale of women to the conquerors make something very similar and write it down. The first time that we actually see this in a cookbook is in Spain, but it includes a lot of European cheeses in it. Not surprisingly this is what happened to all of the Aztec food that was brought to the Eurocentric countries.
In the mid 1800s, we see it come out in a cookbook in Mexico City from a woman who’s lineage was Aztec. It blew up in Mexico City. A lot of people in Mexico City were workers and this was a cheap and easy breakfast to make that filled the stomach of the workers easily.
It has since become super popular around the world as one of the best ways to use up left over tortillas and also have something super flavorful and hearty for breakfast!
Just a few tips; if you have left over and stale chips; these work just as well! It tastes better with corn tortillas, but you can use flour tortillas, it just feels a little more dense than it’s corn counterpart. Get creative with it and add toppings that make you happy; I love a blistered jalapeno on mine! If the sogginess of the chips get to you, you can use chips to dip it as well; gives it more texture!
