I’m so sorry for everything being late the last week, I think I’m catching a cold or something.

I have literally had a migraine for the past 3 days.  It isn’t fun considering all of the things that I am doing right now.

The most important of course is the SF Marin Food Bank Brunch!

I needed to do something different for my lunch/dinner yesterday, I wanted it to be healthy, but hearty.  I needed it to be delicious and wonderful and best of all easy.

So I made a vegetarian lasagna.

It takes like no time to make a lasagna in the Instant Pot, especially if you’re using jarred sauce or a quick sauce like I made!

It was earthy, tangy, rich, and delicious!

Perfect for a Friday night meal!

Instant Pot Vegetable Goat Cheese Lasagna

Ingredients

  • 1 yellow onion,sliced thin
  • 3 yellow squashes, sliced thin
  • 1 cup brussel sprouts, shredded
  • 2 carrots, sliced thin
  • 1 ½ cups marinara sauce (homemade version below)
  • 8 oz goat cheese
  • 1 egg
  • ½ cup shredded gruyere
  • 1 lb dried lasagna pasta
  • 1 tbs sage
  • 1 tsp garlic powder
  • ¼ tsp red pepper chili flakes
  • 1 tsp oregano
  • 1 tbs salt
  • 1/2 tbs pepper
  • 2 cups of water

Instructions

  1. Beat together egg and goat cheese with all seasoning except a pinch of salt and pepper
  2. In a 6 or 7in bowl (depending on size of Instant Pot), spray with non-stick cooking spray, layer noodnes, vegetables, marinara, and goat cheese mixture. Repeat until out of room or no more ingredients are left. Leave a little cheese on the side for the final part.
  3. Put water into Instant Pot, steam rack, and then trivet with the lasagna on top. Put on High Pressure for 20 minutes, let natural release for 3-5 minutes and quick release the rest.
  4. (This is optional depending on your taste) Take the lasagna and flip onto an oven safe tray, sprinkle with remaining cheese, salt and pepper and broil for 5 minutes

  • 1 can of crushed tomatoes
  • ¼ tbs sage
  • ½ tsp garlic powder
  • ¼ tsp red pepper chili flakes
  • ½ tsp oregano
  • 1 tbs salt
  • 1/2 tbs pepper
  • ½ cup of vegetable broth

Instructions

  1. Mix all ingredients into Instant Pot, put on Manual High for 4 minutes. Natural release pressure for 5 minutes, quick release the remaining pressure
  2. Taste and adjust seasoning. Serve with your favorite pasta dishes!
