Steak Burrito Bowl

I think I am too shy for this streaming thing.  I tend to get lost in my own thought and forget to talk.  That’s pretty much what happened to me yesterday.  I’m not sure if anyone really noticed, but I did.

I wanted to make one of my favorite meals for the stream.  It’s easy and it’s fun and everyone gets to chose what they put on it, so it’s great for a gathering.

It’s a steak burrito bowl.  That’s pretty much my favorite meal.  It’s delicious, it’s customizable, and best of all it’s easy to make.

I brown up some red onions and red peppers to give it a little more of kick, but you can do things like jalapenos, lettuce, etc.

You are seriously going to love this dish!

Steak Burrito Bowl

Ingredients

  • 1.5 lbs eye of round steak sliced
  • 2 red bell peppers sliced
  • 1 red onion sliced
  • 1 cup rice
  • 1 can black beans
  • 1 can corn
  • 1 lime juiced
  • 2 tbs cumin
  • 1 tbs corriander
  • 1 tbs paprika
  • Red pepper flakes to taste
  • Salt and pepper to taste
  • Cilantro
  • Avocado
  • Sour Cream

Instructions

  1. Saute the onions and bell peppers
  2. Add in steak and seasoning and cook till browned
  3. Heat the corn and black beans, cook rice according to box
  4. Layer the burrito bowl how you'd like, add hot sauce, avocado, cilantro, and sour cream to taste

 

It’s only Wednesday but it feels like the week is just dragging by. I hate when that happens.  I really want to it to be done.  

B is going back to school soon, so it is going to be so amazing to have time to myself again.

I have so much that I want to do while he’s there!  Especially cleaning the house.

I must clean the house.

I also am thinking of adding another day of streaming into the mixture.  Doing it Tuesday-Thursday and making Wednesday a community day with everyone else gets to pick what we are making/eating.

I think it’ll be a lot of fun!
