I’m sorry I went MIA on my Friday post, it was a really long week, and I hadn’t had time to either go to a place of adult beverages or come up with a new recipe.  Hopefully that won’t happen again!

Can I make up for it with this kick butt and easy red lentil recipe?  I mean, look how bright and wonderful it is.  I can promise you I will try to not skip days again!

Last week was just way too much, sometimes there are weeks like that.  Where I can’t really get anything done except really just being a mom.  With Braedon learning to walk, I have to pay way more attention to him.  He’s just just a little sleeping baby anymore, he’s up, up, up, never wanting to go down.  I have a feeling this is when I start losing some of this baby weight.  I get full workouts with him daily!

I didn’t even order groceries last week!  I’m telling you, it was not my week at all.  I am hoping this week goes back to normal.  Other than the fact that, tomorrow is my birthday!!  Happy birthday to me, I might even make myself a cake, is that lame?  Probably, but I love baking.

Here's my motivation for you this Monday- Just keep going, no matter what.  We get pushed down by life and it seems like we are going to just wither and fail, but if you keep pushing and going, you'll succeed. (I'm mostly saying this to myself.)

We have started cleaning and packing for our move in a couple of weeks!  I’m so excited, I am ready for a bigger kitchen and more space to produce great recipes for you guys! Saturday we went to the park with Braedon.  He got to swing and crawl around and meet new babies.  I love it.  It makes me so happy that he is so social sometimes.  We also got Gelato in North Beach.  Oh my god, blood orange gelato.  The cashier said, ‘I just want to warn you this is bitter, like a grapefruit.’  Gareth laughed and said, ‘she knows, she loves everything blood orange.’ It was fantastic.

Yesterday, Braedon and I went out with our friend and her son to get bubble tea and just enjoy this weather.  I love when we can just relax outside, I really am an outdoorsy person at heart.  Braedon loves it, he can crawl around everywhere, stand up, talk to people, and pretty much everything that he loves to do.  It’s nice that San Francisco has some of the best weather in the country.

I do have a recipe today!  I’ve just been blabbing on like this isn’t a food blog or something.  It’s spinach and shrimp red lentils in a spicy turmeric and tarragon sauce.   I loved the flavors coming together.  I really like the sweetness of the tarragon and red lentils and how they bring out some of the spice, it’s a semi-Indian dish in it’s flavors.  

Spinach and Shrimp Red Lentils

Ingredients

  • 1 cup red lentils soaked (30min) and drained
  • 1 cup chicken stock
  • 1 medium yellow onion diced
  • 1 Tbs coriander 
  • 2 Tbs turmeric 
  • 1/2 tbs chili powder
  • 1/2 tbs red chili flakes
  • 1/2 tbs curry powder
  • 2 tsp tarragon 
  • 1lb shrimp
  • 1 cup spinach
  • 1/2 stick butter
  • Salt and pepper to taste

Directions

  1. Melt butter over a medium low heat
  2. Add onions, saute until translucent
  3. Ad lentils, coriander, turmeric, chili powder, chili flakes, curry powder, and tarragon
  4. Simmer for about 10 minutes
  5. Slowly add in chicken stock, simmer on low until the lentils start to break.
  6. Stir to thicken (lentils release their natural starch) 
  7. Add spinach, simmer for 5 minutes
  8. Add shrimp, cook until shrimp are cooked through (about 6 minutes on low heat)
  9. Add salt and pepper to taste
  10. Serve with rice

It's almost a dal in my opinion, but I would go so far as to call it that!  Enjoy!
