Raspberry Basil 'Mojitos' to end my week

This is literally ‘MomNoms-After Dark,’ unless you’re reading this during the daytime, then it’s ‘MomNoms- After Dark, During the Day.’  I am so sorry that I am so late with this post.  Today was a hassle and yesterday I couldn’t get a photograph of the drink that I made for tonight’s blog.  Oh well, that’s the good thing about the internet, this will forever be imprinted online!

I gave up on taking photographs and sat down to read my new cookbook, talk to the trifecta, and drink my raspberry basil mojito.  Glad the mojito is super easy to make!

Another good thing about having to make this drink 2 nights in a row is that I got an awesome drink 2 nights in a row.  I’m calling it a raspberry basil ‘mojito,’ most would argue that in order for it to be a real mojito it has to have mint in it, so that’s why it’s just a ‘mojito.’ The herby basil flavor mixed with the tart lime and raspberry and the sweet honey makes the perfect drink.  I’m serious, it is literally the perfect drink.  It’s like drinking a raspberry lemonade that contains alcohol.  

This is my mojito from yesterday.  I was so frustrated taking the pictures, but the taste was on point.  So hopefully you guys will enjoy the taste!

I could also call this drink- ‘Damn, it’s almost Friday and I didn’t order ingredients to make a drink, what do I have in the house that would taste good together?’  That one probably fits the best, because I looked at everything that I had and was like, hmm, this will probably taste good together.

We looked at a couple of apartments today, one of which we are hopefully signing on next week.  Which means that we will move in a couple of week and be in England a couple of weeks after that.  I am so excited that Braedon will finally get to meet the rest of his family!  

I’m also super excited that we will have enough room for all of the baby crap that we have seemed to have accumulated, plus it’s a much bigger kitchen, with a window!

After that, we went to our friend’s daughter’s rock concert.  I’m telling you, this little 9 year old girl jammed on the drums.  Braedon loved it as well.  He got to clap to their version of a Queen song.  That was the cutest and most terrifying thing that I have seen in a long time.  I can’t believe that in a few short years, my little man will be in school and all of this will have passed so quickly.

Then we went and got wine and pizza, half of my wine was promptly spilled into my lap by Braedon, thank god it was white wine.  The pizza was so good, I love that part of San Francisco.  I’m going to have to go do a full review there one day because it seriously was amazing and super family friendly.

This weekend I am so excited to hang out with the Trifecta.  I need a little bit of mommy time.    Maybe tomorrow I’ll go to the farmer’s market, if it isn’t raining, and grab some fresh produce for dinner.  Plus it’s always fun to get Braedon over there, people fawn over him and he gets to help me choose what we are going to eat, even if he has no idea that he’s doing it.  I know that we are going to start packing tomorrow, too!  That’s super exciting!

I’m glad I have a new mojito recipe in hand, in case things get stressful and I need a little something to relax.  You want the recipe?  Well, okay, I’ll give it to you!

Raspberry Basil Mojito

The ingredients of this raspberry basil mojito are just gorgeous!

Ingredients

  • 2 shots white rum
  • 4-6 leaves of basil- whole
  • 2 Tbs honey
  • 2 ounces of raspberry
  • 1 lime juiced
  • 1/2 cup lemonade
  • Sprinkle of bitters
  • As much ice as you want

Directions

  1. In a shaker (or a mason jar with a lid, like I used) add rum, basil, lime juice, honey, and bitters.) Stir thoroughly
  2. Add ice and lemonade- shake for 30 seconds
  3. Add raspberry- shake 30 seconds
  4. Serve in a chilled glass
  5. Drink and relax from the problems of the week
