I have a lot of goals for this week! I really want to hit 1k followers this week on Instagram and then really start to work on my Twitter getting more of a following and Facebook too, well and Pinterest. I was really good at engagement the last few weeks, I am trying to keep that up!
I feel like I am really starting to get into my groove and know what I want to write about. I am really starting to fall in love with blogging.
And my kid turns 11 months tomorrow! That’s so terrifying. I don’t know how to feel about it! In one month I will have successfully raised a one year old. Yay me!
That also means that as of tomorrow I have been menu planning and cooking 6/7 days a week for 10 months. That is pretty awesome! I started the blog saying how much money we saved cooking at home.
I think when we hit the year marker, I’ll do a special blog that portrays exactly how much a year has saved! That would be a really cool post.
This weekend I spent a lot of time really working on the social media aspect of the blog and now I’m going to start changing things on the blog. I want it to have more of my voice, I feel this is just too standard looking.
Braedon is still teething, so my house is still full of tears and yelling, I will be so glad when this phase is over.
I was going to have this awesome chicken recipe that I created about a month ago, but then this week I made a salad for lunch. It was so quick, so delicious, so summer.
I changed my content planner and wanted to give you this really quick summer salad that you are sure to love. Especially if you are a shrimp lover.
My favorite thing about summer is the fresh fruits that are available. Fruits don’t always have to be used in desserts, no they can be used in savory dishes too. When you do that, it adds something special to the dish.
Summer Shrimp Salad
- 1 lb shrimp
- 1 head romain lettuce
- 2 apricots finely chopped
- 2 white peaches finely chopped
- 1/2 cup mayo
- 8 oz strawberries blended
- 2 Tbs Olive Oil
- 1 Tbs Dill
- 2 Tbs Tarragon
- 2 Tbs Basil
- Sprinkle of salt and pepper
- Parmesan (To your own discretion)
- In a medium sized sauté pan heat 1/2 your oil
- Add shrimp and half of the herbs.
- Sauté until finished (about 7 minutes)
- Mix together apricots, peaches, and parmesan
- Whisk the strawberries, mayo, and herbs together
- Slowly add in the rest of the olive oil
- Top with shrimp
