I’m continuing my brunch mini series by offering you guys a little pumpkin.
I know, my blog has been full of pumpkin lately, but I love fall and all of the wonderful food that comes with it.
Plus, most of the year, you cannot get fresh pumpkins and pumpkin in a can is just not the same.
A few years ago when I tried to start a different food blog, I made pumpkin cream cheese muffins and I have always wanted to try to make them again, so that’s what I did.
This recipe is pumpkin, spice, and everything nice. Seriously, it is wonderful!
Best part is, they aren’t too sweet and the kids can have them as well.
B was a huge fan of them.
The other special thing about these muffins is that AmazonFresh seriously screwed up and didn't deliver our groceries the day that I needed them.
This recipe is literally created from things that I had in my fridge that I knew would bake well.
The texture is light and fluffy and perfect for a muffin of it's caliber.
