Leftover Turkey Croquettes
The holidays leave you so many leftovers and most of the time you have no idea what to do with them! I have made a quick and easy recipe to make croquettes with your leftovers!
There was so much food Thursday that I feel like I stuffed myself for the next like 90 days!
I had a lot of leftovers, so on stream we decided to use them and make a ton of leftover dishes!
One of my favorite ones was an amazing baked croquette!
I had never heard of croquettes when I was younger, if I would have known that you could have a breaded potato meal, I would have died and gone to heaven.
Seriously.
It is not that hard either, which is amazing, especially if you have spent days cooking for your friends and family for the holidays!
Leftover Turkey Croquettes

Ingredients
- 8 oz turkey, cut very small
- 4 potatoes, peeled (Or 4 cups leftover mashed potatoes)
- ½ stick butter
- 1 sweet onion, diced
- 1 cup chicken stock, divided
- 2 tbs olive oil
- 1 tsp sage
- 1 tsp chili powder
- 1 tbs garlic powder
- 1 egg, beat
- ½ cup bread crumbs
- Salt and pepper
Instructions
- Preheat oven to 450F
- Put cast iron skillet on medium heat, put oil in, saute onions until translucent with a pinch of salt and pepper
- Boil potatoes and smash with ⅓ cup chicken stock, a pinch of salt and pepper, the sage, chili powder, garlic powder, and butter, set aside.
- Add turkey and remaining stock to the onion and cook down for about 5 minutes
- Add turkey mixture to the potatoes and mix with your hands until slightly smooth
- Form the mixture into balls, brush with egg mixture, and cover in bread crumbs
- Put all of the balls into the oven and cook for 35 minutes or until golden in color
- Serve with Aioli, ketchup, hot sauce, or mayonnaise
