Well, in all honestly it’s only pork inside pork. I made this amazing bacon, peach, and blue cheese stuffed pork chops last night. I decided that my Sunday Blog would be included the recipe to these pork infused pork chops!
Yesterday we went to Goatchella so that Braedon could visit a goat for the first time, ever. He absolutely loved it. The tiny goats were soft and passive, so he was able to pet them without fear.
Today, I am meeting up with a mom friend of mine for lunch, I am so excited about it! I love meeting up with certain people, especially when they have the same interests and ideals as me. And it really helps if they are parents as well. I never knew how much that would help after having kids.
It is really strange, but sometimes being around ‘single’ people makes me feel really strange. It’s just me though.I feel weird around all people. At least pork will always get me!

I set up hootsuite the other day and it’s kind of cool. I mean, when I know I’m going to be out all day, it does not mean that I have to go without posting on my social media. Do you guys have hootsuite or buffer? Do you like it?
I’m glad that Braedon is napping right now, so I can get this all done at a reasonable hour, that doesn’t happen often. He loved the pork chops as much as we did, but I guess he just has a huge appetite! I love this little man and how much he likes food.
This week I get to meet up with Miss Cheesemonger and collaborate on some macaroni and cheese! I am so excited to see this popular San Francisco Food Blogger again. I love that my blog and photography are allowing me to do things like this! Of course, the mac and cheese will have some amazing cheese and bacon. :P Let’s just say, Bacon Girl meets the Cheesemonger.
I also am going to an amazing company to do a test shoot for them on Friday, hopefully this will lead to more food photography for them!
Here’s your pork goodness my friends!
Bacon, blue cheese, and peach stuffed pork chops
- 4 boneless porkchops butterflied
- 1/4 cup blue cheese
- 2 tbs peach puree
- 1/2 pound bacon chopped into small cubes
- 1 Tbs tarragon
- 1 Tbs sage
- Salt and Pepper to taste
- Cooking twine
- Preheat oven to 375F
- Heat bacon on a medium low heat until crisp
- Mix blue cheese and peach puree
- Dry pork chops and rub with seasonings
- After bacon is done- pour out most of the bacon fat leaving about 2Tbs
- Stuff the pork chop with the blue cheese, peach, and pork chops and tie them on the bottom and the top
- Heat the oil on a medium high heat
- Add the pork to the oil(fat) and brown each side for about 6 minutes
- Put into oven for 20 minutes or until the pork hits 165F
- Take out of oven, cover in aluminum for 10 minutes
I hope that you enjoy this pork! You can leave it in the fridge for up to 3 days, but honestly I wouldn't. I would eat it all at once! It goes well with roasted potatoes and other veggies.
