Perfect Spring Salad

Spring has finally sprung here in San Francisco and the weather is gorgeous.  I’m talking 70s, sunny, and a little breezy.

Spring always makes me want to eat healthier, I don’t know if it’s because summer is just around the corner and the clothes are more revealing or if the light weather makes me want to eat light.

Spring salads are the epitome of spring, in my opinion.  The fresh produce and usually the light dressing makes you really think of how everything is blooming and fresh.

One of my favorite salads to eat is a spinach, walnut, and feta salad with an orange champagne vinaigrette.

The sweetness of the dressing really tames the sour feta and brings out the earthiness of the spinach.  It’s seriously like take a bite of spring itself.

Orange Champagne Vinaigrette

Ingredients

  • 3 oranges juiced
  • 1 orange zester
  • 3 tbs champagne vinegar
  • 1/4 cup olive oil
  • 2 tbs oregano
  • 1 tbs sage

Instructions

  • Put ingredients into a mason jar and shake thoroughly

  • 1/2 cup feta
  • 1/2 cup walnuts
  • Orange Champagne Vinaigrette dressing to taste

Instructions

  • Combine all ingredients
