Peppermint Chocolate Chip Cookies

I woke up this morning in the Christmas mood.

I turned on Trans-Siberian Orchestra, started dancing, and decided to make a festive Christmas cookie for the blog.

I wanted something that really brought together the flavors of the holiday.

So I started thinking about my favorite holiday drinks, how they contain chocolate and peppermint.  I knew I wanted to make something with both of these flavors.

So, here I come with a peppermint chocolate chip cookie.  These are the most perfect cookies in every single way; they are big, fluffy, chocolaty, homey, minty, everything that makes you feel like Christmas is in 12 days.

Do you ever have a problem with your cookie spreading and going flat?

I bet I know what your problems are.

  1. You have too much butter in your mixture.

  2. Your butter is too warm.

“But, MomNoms, how do you know that this is my problem?”

Simple, when butter melts it spreads the mixture, if you have too much butter it melts too fast for the flour to grab hold and expand, causing the cookie to really spread and go flat.

That’s the same thing that happens when the butter is too warm, the flour doesn’t get a chance to really combine with the butter.

Duff taught me this on one of his Food Network shows the other day.  Once he said it, it’s like it all clicked in my head and made complete sense.  

Today, I really wanted to experiment, so I made 3 batches and honestly the best ones were the cold butter with ¾ cups of butter instead of the normal 1 cup.

Knowledge is power, so they say.
