This week has been a lot of change for how I’m working and going throughout my day. I started running and doing yoga, my goal is to be able to go to the yoga class downstairs from me in the next month or two.
I am so excited about getting back into the swing of things, it’s been since before B was born that I was like this. I feel like I owe it to myself and to him to be in shape.
I also have 15 weeks done of my meal planning subscription, so when the website is redesigned I can launch it, so be excited!
The weather has been 100% better than it has been, I feel like spring is here already. I love how it feels and I love being outside. I need a pit so that I can do some hometown Texas BBQ. Would you like to see that on the blog?
I have been so focused on Valentine’s Day coming up that I completely left out the fact that some people hate Valentine’s Day.
And by some, I mean most people hate Valentine’s Day.
I am not even celebrating this year, as I am working. Which, honestly, is something that I would rather be doing anyway.
I decided to make my version of a mudslide for all of those Single’s Appreciation Day and Galentine’s Day celebrations.
When I went to the Winter Fancy Food Show Sunday, I met a girl who just randomly picked me out of the crowd and took me to her booth. She showed me her product and gave me a taste and I absolutely fell in love.
It’s called Arctic Zero and it’s basically a healthier version of an ice cream.
I know, I know. That sounds disgusting.
But it was delicious!
I wanted to use the peanut butter, which is their new product, in this mudslide. It brings so much to the original chocolate flavor that you usually get in the mudslide.

Peanut Butter Mudslide
The best way to celebrate Single's Appreciation Day is with a Peanut Butter Cup Mudslide
- 1 Pint Arctic Zero Peanut Butter Cup Ice Cream (or similar)
- 3 tbs liquid chocolate + more for drizzle
- 2 tbs peanut butter
- 1 cup almond milk
- 2 shots white rum
- 1 shot vodka
- Crushed peanut butter cups
- Blend all ingredients except peanut butter cups
- Pour into glass and top with crushed peanut butter cups
