Peach and Lime Muffins

It’s the 2nd day of B being in partial daycare!  I am a nervous wreck mama because I’m used to being with him all of the time.

I have spent my few hours alone working at a little cafe close to his daycare.  I’ve mostly been daydreaming about recipes and flavors that I thought would be good together.

I cook more when I’m nervous, so this week I have been a cooking and recipe creating machine.  

I tried to come up with a new muffin recipe that was fresh and fun, something amazing to end off my muffin month.

Peach and lime.

It came to mind because I was listening to Panic! At the Disco and there is a line that says, ‘Peach and lime daiquiri.’  And I thought that flavor combination sounds so amazing, I have to use it in something.

It’s fresh, abnormal, and best of all tasty.

I whipped up the recipe that I came up with and it was perfect.  The muffin is fluffy, moist, sweet, but a little tart.  I think this might be one of the best muffins that I have come up with so far.

Peach and Lime Muffins

Ingredients

  • 1 1/2 cup flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, melted
  • 1/4 cup milk
  • 1 egg
  • 2 limes juiced and zested
  • 2 medium peaches peeled, pitted, chopped
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 400 and In a large bowl combine flour, baking powder, salt
  2. In a smaller bowl whisk together butter, lime zest, vanilla extract, lime juice and sugar, slowly add in milk and sugar
  3. Whisk smaller bowl into larger bowl being careful not to over mix.
  4. Split evenly in a lined and greased oven tin
  5. Cook for 20-25 minutes or until golden brown and toothpick comes out clean
