Matcha Strawberry Muffins
It’s week 2 of muffins!
I decided to do one of my favorite recipes, a strawberry matcha muffin. This is perfect for breakfast because it has a little bit of caffeine in it, plus lots of vitamins and antioxidants that will help you to feel good all day.
I obviously hadn’t had breakfast when I made these muffins.
We have everything child-proofed with these magnetic door stoppers. We have a couple of the magnets to open them up. Well, I misplaced one magnet and grabbed the other one.
When the muffins were finished I was looking for the second magnet and realized that there was melted plastic in the oven.
I melted the magnet.
It’s a bit funny. Well, maybe it’s really funny.
Matcha Strawberry Muffins
- 2 cups flour
- 2 cups (1 pint) chopped strawberries
- 2 eggs
- 1 cup softened butter
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 cup milk
- 3/4 tsp salt
- 1 1/2 tsp vanilla extract
- 2 tbs matcha powder
- Preheat oven to 375 and line a 12 cup muffin tin with liners
- In a medium bowl whisk together the flour, baking powder, salt, and matcha
- In a bowl beat together butter and granulated sugar until light and fluffy. Add one egg at a time. Beat in vanilla extract
- Add milk and then flour mixture
- Slowly fold in strawberries and scoop into the liners
- Bake for 25 minutes or until golden and a toothpick comes out clean
