Monday's were made for Bacon
It’s Monday, Monday, Monday… Imagine me singing that, or don’t, because I really cannot sing. I was going to do a different dish this wonderful Monday, or mundane Monday, or terrible Monday, depending on who you are, but after popular demand on Instagram, I’m doing my B.L.T pasta. That’s right B.L.T, but wait, they don’t necessarily stand for bacon lettuce and tomato, no, this is a special B.L.T. Bacon, lime, tomato pasta.
I know that doesn’t really sound like it would all go together, but this may have been one of the best dishes that I have ever created. I really mean it. Gareth and I ate it up, so did Braedon, but he eats everything.
How was your weekend? Mine was fine, I loved hanging out with my friends on Sunday. It was nice to ‘have a day off,’ in so many words. I really didn’t do anything for the blog, except take photographs of brunch, because...well I’m going to blog about it of course.
Where is time flying off to so fast? I mean, wasn’t it just Christmas? I’m about to celebrate 6 months of my blogging journey and I’m still going strong. I can’t believe how much I’ve already matured and learned.
I really noticed how much time went by last night when Gareth and I went through Braedon’s clothes. He was so little! I don’t think I really noticed how much he’s grown until I look at the newborn and 0-3 month clothes. I can’t believe that stuff really fit him!
Should I do a motivational quote every Monday? I was thinking of doing one and then I thought it might be too much. I mean you probably have enough to worry about today!
Speaking of worrying. Braedon is due to get another set of shots today. I’m not looking forward to it. I cannot stand to see the poor little guy cry. He’s been good about it up to now, but he’s so much more vocal and opinionated now. Wish us luck!
I might need more bacon after today.
- 1/2 lb bacon
- 1/2 stick butter
- 1/4 Tbs flour
- 1 cup cream
- 1/2 lb cherry tomatoes
- 1/4 cup of fresh lime juice
- 1 lime zested
- 1/2 cup fresh basil chopped
- 1 cup goat cheese
- 1/2 cup parmesan
- 1 tbs rosemary
- 1 lb of your favorite pasta!
- Salt and pepper to taste
- Pre-heat oven to 350- put bacon in for 15 minutes, flipping half way through, or until crispy
- On medium low heat melt butter
- Slowly whisk in flour, making sure there are no lumps
- Slowly pour in cream, stirring as you go
- Add tomatoes, lime juice, zest, basil, salt, pepper, and rosemary, let simmer until tomatoes burst
- Boil water and cook pasta as box directs
- Pour 1/4 cup of pasta water into sauce and whisk until smooth
- Drain pasta- set aside
- Add cheeses and simmer until melted
- Add bacon, simmer for 5 minutes
- Stir in pasta
What are you eating this week? I’m really looking forward to dinner tonight, I’m making chicken salad. I need something light and healthy after how much I’ve eaten this weekend!
