Instant Pot Basil Coconut Chicken Curry

This might have been my best stream yet, no technical problems, lots of conversation, and great food!

I made basil coconut chicken curry in the Instant Pot. Including rice time, it took less than 30 minutes.  Can you believe that?

A real meal in less than 30 minutes!

So perfect for those nights that you’re in a hurry!

I loved it, it had a bit of spice to it, which I needed to counterbalance the sweetness of the coconut!

Braedon absolutely loved it, he ate a whole bowl before it was actually dinner time.

I really wanted to make something that was super flavorful but was easy and I’ve been in an Asian kick lately.

Having curry was perfect, it had so much flavor and was perfect for my night.

Going back to stream, I feel like I am opening up so much more.  I feel like the people who are my regulars are also opening up more and it just makes for better content.

Now, I am eating my curry, hanging out with my son, and really trying to relax a little more.

Instant Pot Basil Coconut Chicken Curry

  • 1/4 cup chopped basil
  • 1 yellow onion chopped
  • 2 lbs chicken chopped
  • 3 jalapenos sliced
  • 2 tbs curry seasoning
  • 1 tbs ginger
  • 1 tbs garlic
  • 1 tsp red pepper flakes
  • 2 tbs flour + 1/4 cup hot water
  • 1 can full fat coconut milk


  1. Turn IP on saute and add in onions for 5 minutes, add in chicken and half of the seasoning
  2. Turn off the saute, add in the rest of the seasoning, basil, jalapenos and put on manual for 10 minutes
  3. When finished add in the flour slurry to thicken it a little
  4. Serve with rice

Y’alls tips on helping to distract my son really helped.  He was such an angel during the stream, it was gorgeous.

So much easier.

Plus I distracted him with food and he was so happy. Haha!

I also cooked 5 meals for my client while on stream. I still have 9 more to go tomorrow, so I’ll literally be cooking all day.  But hopefully, I get a break after that!

I need a break.
