Instant Pot Cajun Spiced Zucchini
I had a reader write in and say that their least favorite vegetable is zucchini.
I will have to respectfully disagree with them, but then they could just not have this awesome recipe to eat it with.
If you know me, you know that I love cajun flavors, so I decided to combine some cajun spices with a little hot sauce for a spicy, but buttery flavor.
I usually make this in a pan, but I have been loving my Instant Pot lately, so I have been using it as much as possible.
Plus it’s just easier to cut up the zucchini and throw it into the Instant Pot and press a few buttons.
I don’t like overcooked vegetables, I feel like that’s one reason that so many people hate vegetables. They’ve just gotten overcooked and under seasoned veggies.
Cajun Spiced Zucchini
- 4 zucchinis sliced
- 1 Tbs butter
- 1/2 cup water
- 2 tbs cajun seasoning
- 1 tsp paprika
- 1 tsp garlic powder
- Put all ingredients into instant pot and stir
- Set manual low pressure for 1 minute
- Serve as a side
