Eating in the Middle- Part 2

Once again, I feel so far behind that I can’t catch up.

I haven’t really been able to be on my computer much lately since Braedon is going crazy with energy and wanting to walk.  It’s really hard to do the small things for the blog that I would normally do.

I think he’ll calm down a little once we get a little more routine in the new house!

My has felt like it’s crawling by, when it’s also speeding by.  Does that make any sense to you?

Our AmazonFresh order was a day late, yes, a day.  I was really frustrated because it put me so far behind.  I haven’t even made a recipe for Monday’s blog yet!

I seriously want to cry.

Anyway!  This is Part 2 of my several part series on “Eating in the Middle.”

I made her Chicken & Mushrooms in Mustard Marsala Cream Sauce.

I have to say, I enjoyed this one a lot more than the Lemon Roasted Chicken.  If I had to chose between the two, I would definitely prefer this one.  It just feels more filling.

Not only does it feel filling, but it has a light creaminess to it that cuts the bitterness of the wine and mustard.  The onions soak into the mushrooms and give i just a pop of sweetness with each bite. I opted to use a very grainy dijon mustard for the recipe.  Not only did I get more flavor from it, but it looks beautiful on the plate.

I love the color of the chicken from lightly frying it in extra virgin olive oil.  I love colorful plates, if you haven’t been able to tell from my photos this far.  I want to see the greens and reds of a plate.  I’m really happy that this plate had a little color added to it with the parsley.  The parsley also gave it just the right amount of earthiness.  Overall, this is such a well balanced plate.  I recommend it to EVERYONE!  Right now, go eat it.

I’m thinking of trying to brainstorm some new recipes and content while Gareth is home, so that I can have a little bit to myself.  Oh maybe, I can even go to a coffee shop on my own!  The luxury.
