Quick and Easy Breakfast Taco to Cure your Weekday Rut
Some of the easiest breakfast tacos that I have yet to make. These have lots of flavor, take 10 minutes, and get you through your morning rut!
One of the hardest things for me is making sure that I get breakfast or anything to eat during before 5pm.
Not only for me, but for Braedon as well.
It’s hard for me to want to cook 24/7- don’t get me wrong, I love cooking, it just gets so tedious sometimes.
Yesterday Braedon and I went to my best friend’s daughter’s first birthday and it kind of just killed me.
I have been exhausted since yesterday.
I didn’t write what I wanted to, in fact, I was not into cooking at all last night. So we ordered out.
After waking up this morning, still exhausted, I was trying to figure out what to eat.
I looked in the fridge and it hit me, good old fashioned, at-home, potato breakfast tacos.
Breakfast tacos that take about 10 minutes to make! Great for a quick breakfast!
I highly recommend this recipe for whenever you need something quick and flavorful to eat.
Easy Potato Breakfast Tacos
Ingredients
- 2 Tbs Oil
- 4 Chopped Gold Potatoes
- Salt and Pepper
- 2 eggs
- 1 Tbs Milk
- 1/2 tsp siracha
- 1/2 tsp cayenne
- 1/2 tsp red pepper flakes
- 1/2 tsp paprika
- 1 tbs garlic powder
- 1 tbs ground cumin
- Corn Tortillas
- Monterey Jack Cheese
- Sour cream and hot sauce optional
Directions
- Heat oil in a pan on a medium low heat
- Add potatoes
- Salt and Pepper
- Cook potatoes through
- Lower heat to low
- Whip eggs, milk, and siracha
- Add to pan
- Pull away from the outside until eggs are cooked through
- Heat corn tortillas
- Add cheese
- Put mixture on tortillas and add condiments
