Cranberry Orange Muffins

I am so tired when I wake up lately.  It may be that the little man is waking up way earlier than usual, which means I am getting less sleep.

Go to bed early you say?

I can’t really do that, I work mostly at night, so I have to stay up to get work for the blog and other things done.  But, it’s okay, I have come up with a few hacks that help me in the morning.  

My biggest one is that I make muffins for a few days of breakfast.  It makes life so much easier to make something in the afternoon on Monday and Thursday and have breakfast ready to go the rest of the week.

I decided to share with you guys a few of my muffin recipes so that you can use this hack whenever you are too tired to do breakfast every morning.

My first muffin is a cranberry orange muffin, inspired by Starbuck’s cranberry orange scone.  It has a lot of citrus flavors, is light and fluffy, and has these amazing tart surprises throughout.

Orange Cranberry Muffins

  • 1 3/4 cups AP flour
  • 1 cup sugar
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1 cup greek yogurt
  • 1 egg
  • 2 oranges juiced and zested
  • 1 cup dried cranberries
  • 1/4 tsp vanilla extract


  1. Preheat oven to 400F, line cupcake pan with liners
  2. Mix all of the dry ingredients in a large bowl
  3. Lightly whisk all the wet ingredients and slowly add them to the dry ingredients
  4. Divide among 12 liners evenly
  5. Bake for 20-25 minutes or until golden brown

I love these muffins, they might be my favorite, actually.  

B loves them too, he loves finding the cranberries in them and picking them out to eat them separately.

Defeats the purpose, I know, but it’s so stinking cute!
