Coq Au Vin Blanc
I have such bad writer’s block right now. I have no idea how to start this post. I hate when I get like this. I always feel so useless when I can’t write or when I feel like everything that I’m saying makes no sense at all.
Do you ever get like that?
My stream on Saturday was a series of technical difficulties.
It started off with my audio not working, then my chat, then my audio again. I have no idea what was going on.
It was tough to get through too because I felt so tired and so defeated with everything else that was going on. I barely made it through the Coq Au Vin and that was only an hour, I had to do something else.
So I cooked a few things that I had to make for my client.
It wound up turning out okay but was still really hard to get through.
This Coq Au Vin was not hard to get through, however.
I made it blanc or white, with white wine and chicken stock instead of red wine and beef stock.
It turned out so freaking good.
It was creamy, a little sweet, savory, and delicious.
This is the type of meal that you make for people when you want them to think that you’re a fancy French cook. It’s not that hard, beautiful, and so good that you are sure to impress anyone.
Coq Au Vin Blanc
- 1.5lb chicken breast
- 1 onion chopped
- 3 stalks celery chopped
- 2 carrots chopped
- 1/4 cup butter
- 1/4 cup flour
- 1/2 cup frozen peas
- 3/4 lbs crimini mushrooms
- 2 cups chicken stock
- 1 cup dry white wine
- 3tbs dried thyme
- 2 tbs oregano
- 2 garlic cloves minced
- Salt and pepper to taste
- Over a medium heat, brown the chicken in a large pot
- Take out chicken, add celery, onions, carrots and soften for about 5 minutes
- Add butter and flour and mix thoroughly
- Add chicken stock in 1/4 cup at a time
- Add spices, seasoning, peas, and mushrooms and bring to a boil for 45 minutes
- Add wine and chicken, bring to boil for an hour.
I cured my writer’s block by watching movies and relaxing. I think it helped a bit.
At least I could get through my blog post.
This week is going to be super busy! I have a couple of clients, streams, blog posts, and a company party to attend on Friday.
Not to mention after stream on Saturday I have to take my computer in to see if they can fix my keyboard because the keys on mine are sticking. No, I didn’t spill anything, it’s just an issue with the new MacBooks apparently.
I love when the weeks are busy, but I definitely need a lazy day soon.
