Chimichurri Salmon with Roasted Fall Vegetables

This easy weeknight salmon recipe only takes 30 minutes to make, so it gives you time to enjoy your family instead of overworking yourself in the kitchen.    A 30 minute, flavorful, salmon meal, made with fall vegetables to bring you into the fall season.

I have been racking my brain on what to do with all of these wonderful fall vegetables and I realized, I did not have a great salmon recipe.

I mean, I have the basic lemon salmon recipe, but nothing that really stands out.

I decided to make a carrot top chimichurri grilled salmon with roasted fall vegetables.

And let me tell you the results were killer.

The carrot tops have a little bitter taste, but mixed with the chard and the sweetness of both the salmon and the vegetables, it sings.

Even B really loved it, he had 3 pieces.  Which, in all honesty, is not that surprising, but really makes me proud.
