Chicken Marsala


Braedon’s birthday was this weekend and we had so much fun playing with his new toys.  But it made me miss a blog post.  I’m not sad that I missed it though, I loved the time that I had playing with my little man.

I made affiliate on Twitch!  That makes me so happy!  It means that I have a little more opportunity to start a community there.  It does give me more hope to make a community there that really lasts.

I decided to make a chicken marsala on the stream yesterday and it was gorgeous.  It tasted so good.  But the secret is, I didn’t use marsala wine.  I couldn’t find it anywhere at my local grocery stores, so I had to do a lot of research and make it myself.

Marsala wine is just fortified wine and you can do that with a little bit of brandy.

I thought that was the greatest tip that I have heard of in a long time.

It tasted just like it too.

There wasn’t a difference between this chicken marsala and the one with marsala wine.

Chicken Marsala

  • 2lbs boneless chicken breast pounded
  • 1 cup flour
  • Salt and Pepper
  • 8 oz mushrooms halved
  • 1 cup white wine
  • 2 tbs brandy
  • 1 cup chicken stock
  • 1lb bacon
  • salt and pepper to taste
  • 2 tbs olive oil


  1. Take olive oil and heat it over a medium high heat
  2. Dredge the chicken in flour and heat each side for 4-5 minutes a piece
  3. Take out, add bacon, and mushrooms
  4. Add wine and reduce in half
  5. Add chicken stock and chicken, reduce in half. And serve.

I have had major ear problems over the past 2 weeks.  I think we have finally found the solution and we are going to have to do a minor surgery on it.  

It might put me out of the blog scene for a day or two.

But before that I get to go to TechMunch for the 2nd year in a row!  I can’t wait to learn more about what other people are doing and how they are blogging.   And to meet more people who are amazing bloggers in the bay area.
