Buddha Bowl with a Red Pepper Sauce

It’s the end of February already!

How was your month?  I hope it was good for you!

Mine was fantastic, I really enjoyed doing this vegetarian series, it reminded me of when I was a vegetarian and help me to add some meatless meals to our meal plan!

Do you have a ‘meatless’ Monday or something similar?  I think it is a fantastic idea to not always serve meat.  Plus, hopefully, it will add some diversity to little man’s pallet.

It’s that time of the month for my recipe swap and this is a great one to end my vegetarian month.

What’s a Buddha Bowl?

A Buddha Bowl is a vegetarian or vegan hearty bowl of greens, grains, and veggies.

This Buddha Bowl includes quinoa, chickpeas, avocado and an amazing red pepper sauce!  This is the perfect lunch or dinner.

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 1/2 cups cooked chickpeas
  • Drizzle Olive oil
  • 1/2 tsp salt
  • 1/2 tsp paprika powder
  • 1 tsp chili powder
  • 1/8 tsp Tumeric
  • 1/2 tsp curry powder
  • 1/2 tsp oregano
  • 1 paprika, ribs and seeds removed
  • 2 tbs olive oil
  • Juice from 1 Lemon
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp paprika powder
  • 1/4 cup fresh coriander
  • Mixed greens
  • Avocado
  • Sesame seeds for garnish


  1. Preheat oven to 430F. Start by cooking quinoa. Bring 2 cups water to a boil and then add quinoa. Simmer for about 15 minutes until all the water is absorbed. Remove from heat and keep covered so quinoa can absorb any excess water.
  2. In a bowl, toss chickpeas, oil, salt, paprika, chili powder, kurkuma, curry powder, and oregano until chickpeas are evenly coated. On a baking sheet lined with parchment paper bake chickpeas for 15 minutes. When done, remove from oven and let cool.
  3. Add paprika, lemon juice, 2 tbs olive oil, pepper, salt, paprika powder, and coriander in a blender and blend until smooth.
  4. Finally, assemble the buddha bowls. In two bowls, add quinoa, mixed greens, avocado, and chickpeas. Drizzle everything with red pepper sauce, and sprinkle with sesame seeds.
