I didn’t know if I was actually going to be able to do this blog because my back is still out and I was not able to make the bourbon caramel until right before I had to write this.
Which means, this caramel is the easiest that you can make, because a girl with a hurt back can make it.
I don’t actually know if that’s true or not, but I find it pretty darn impressive that I was able to make it while pretty much icing my back and trying to make everything feel better.
G was not so happy that I wasn’t resting, but I told him that when you’re still in the early stages of creating a brand, you can’t really rest. You have to go all in and get it done!
Plus I love my readers so much that I don’t want to deny them another recipe.
This caramel is soft and chewy and perfect for Valentine’s Day or any other day that you want a delectable treat.
I made this caramel a little different than you would usually make it, for example, this is a golden caramel, there is no brown sugar in it, just granulated sugar. I love the golden color a little more than a darker caramel.
And like I already said, I made it easier than a whole bunch of steps and it turned out amazing.
Golden Bourbon Caramel
Wonderful chewy and creamy caramels with a hint of bourbon
- 3 cups granulated sugar
- 1.5 cups heavy cream
- 1 cup corn syrup
- 1/2 cup bourbon
- 2 cups butter
- 2 tbs vanilla extract
- A pinch of sea salt
- Combine sugar, cream, corn syrup, bourbon, and butter
- Bring to a boil, stirring occasionally
- Place candy thermometer in mixture and bring down to a medium low heat
- Do not touch mixture, but allow to come to your desired color, and temperature between 245-260F
- When finished stir in vanilla extract
- Allow to cool for 2-3 hours in the refrigerator

I think that caramel is one of my favorite sweets. I know that it’s probably because it is pure sugar, but seriously it’s the perfect candy. It’s sweet and smooth and chewy and creamy, everything that you could ever want or need in a candy. Except maybe chocolate. Yeah, chocolate is good too.
