I like big butts and I cannot lie
I just got back from going out with a couple of other moms in the city! I am such an introvert, so I get really nervous when I do things like that, but seriously, I am figuring out the harder I push myself to do new things the happier that I am.
Braedon was awesome, he loves going new places. He just looks around at all the new things. I know it is really healthy for him to go out, but sometimes I just can’t force myself to. My anxiety gets really bad and I doubt everything that I’m doing, especially now that I’m a mom.
This week has been really off for me. I haven’t really taken pictures this week and I’ve only cooked 3 out of 7 days, which is completely unlike me. I just haven’t felt really… I don’t know how to describe it, I guess up.
I made beef stew and cheddar and rosemary biscuits for friends of Gareth and mine. They just had their new little bundle a little over a week ago! He is so small, it’s hard to think my big boy was that small not that long ago! I can’t believe how fast they grow up :(
The Super Bowl is in the city, not really a fan of that right now. There are so many more people where I live and it’s ridiculous! I just hope there isn’t much extra crime or anything this week.
Speaking of crime, I’m reading this ridiculously good book called The Verdict. I’m only about 200 pages in because of mommy brain, but I love it. I got it through the Book of the Month Club- they send you a book monthly that is picked out by their guest judges. I got a 3 month subscription for $27.00. (I will definitely be renewing.) I like it because I didn’t have to go and look through a bunch of books to figure out what I want, which is hard with a little guy. I’m excited to finish this one and get next months!
I’m thinking of calling some of my old employers and asking them if I can do some food photography for them that they can post online and credit me for, but I do it for free. I would love more practice and to get my name out there, I really love what I do. If you know anyone who would like this done, shoot me an email! I’m pretty much in love with macro food photography right now.
Braedon is obsessed with his tongue. I’m pretty sure he just figured out that he has it and just loves to stick it out. His fine motor skills have started to kick ass! He gently touches my face or whatever he wants to play with instead of slamming it! He loves this little toy that santa got him and I hang on his play mat. He goes after the pink, donut, looking circle and starts chewing it, which is awesome! One of Gareth’s friends sent him a new romper, so we did a little photoshoot in it. It fits us so well!
I got asked to do some more crock pot/pressure cooker recipes, which is something that I love doing, especially when I’m not *really* in a mood to cook. One of my favorite things to make is pulled pork- which is something that I happened to have made this week- with homemade bbq sauce that it simmers in and a spicy purple cabbage slaw. Let me tell you, the flavors come together so well and it’s like a party in your mouth!
I was telling a couple of my friends today that I was a vegetarian up until a few years ago. I feel like I’m trying to catch up on all the meats that I did not eat for so long!
- 3 lbs pork shoulder (butt)
- ½ Tbs- Coriander
- 1 Tbs- Salt
- 1 Tbs- Pepper
- 2 tsp- Sage
- ½ Tbs- Paprika
- 1 tsp- Cayenne
- ¼ cup- IPA
- 1 cup- apple cider vinegar
- 1 tsp- Onion powder
- 1 tsp- Garlic powder
- 2 Tbs- Brown sugar
- 1 tsp- Vanilla extract
- 2 cups- Ketchup
- 2 tsp- Molasses
- 1 head- Purple cabbage
- 3- Carrots julienned
- 2 Tbs- EVOO
- ¼ cup- Mayo
- 3 Tbs- Hot sauce (I used Frank’s)
- Salt, pepper, cajun seasoning to taste
Cut pork into 2 inch pieces and toss in seasoning of salt, pepper, sage, paprika, coriander, and cayenne.
Heat 1 Tbs of olive oil in the crock-pot on High temperature
Add pork and brown for about 5 minutes
Pour in IPA and stir to deglaze the bottom of the crock pot
Add in vinegar, onion powder, garlic powder, brown sugar, vanilla, ketchup, and molasses
Heat for 10 minutes
Add pork in and let it set on high for 4 hours or low for 8 hours
1 hour before finishing take two forks and shred the pork
Also one hour before finishing shred the purple cabbage
Put into a large bowl with 1 Tbs EVOO and the julienned carrots
Massage the mixture until it is soft
Add in the mayo, hot sauce, and seasoning
Mix well- place in fridge until pork is done
Serve on bun, tortilla, or by itself
This can last 72 hours in the fridge or you can freeze the pork for up to 60 days. Reheat it by microwave or putting in a skillet at medium heat.
I was reading on another food blog on how to get followers and really get this up and going and it said to do a 30 day writing challenge or something like that. I think that sounds really fun! I’m going to look into that, if anyone has one that they want me to do comment below!
I was also talking to another mom the other day about cooking. She said the worst part of cooking is making a meal plan and buying the groceries. There aren’t many resources or people who will do that for you. I was thinking it would be something cool to add into this site, what do you think?
