Balsamic Pesto Asparagus
Asparagus is the name of this blog post. I know people who love it and I know people who hate it. I feel like it’s one or the other, not in between.
I was trying to think of the best way transform the flavor of asparagus and for some reason, a Caprese salad came into my head.
The balsamic vinegar specifically.
I think that balsamic has such a great flavor and really brings out the earthiness of the asparagus.
I also thought pesto.
Why not make a balsamic pesto?
I know, you’ve probably never heard of that and honestly neither had I. I used my walnut pesto recipe and added a little balsamic into it.
It was delicious.
- 2 tbs olive oil
- 1 bunch asparagus
- Pinch of salt and pepper
- Serve with pesto on top
- Preheat oven to 400F and cut white woody parts of stalk off of asparagus
- Coat in oil and sprinkle with salt and pepper
- Roast for 8-12 minutes
- 1/2 cup Basil
- 1/4 cup walnuts
- 1/4 cup olive oil
- 3 tbs balsamic vinegar
- Salt and Pepper to tast
- Blend all of the ingredients until a smooth consistency forms
I had to do a couple tries of roasting the asparagus to get it how I wanted it and how I wanted the flavor.
Do not put the pest on until after the asparagus is done roasting or else it gets this really strong walnut flavor that overpowers the rest of the dish.
