Andouille and Shrimp Gumbo

I think it’s come up once or a million times, my favorite thing to cook is Cajun food.  I wanted to bring that passion to my stream.

However, I was so tired, that my stream kind of turned into ramblings.  

Oh well, at least I can focus on the blog and say what I wanted to say on my last stream.

The secret to a good gumbo is the roux.

When you’re making French food, you want the roux to be a nice golden brown color, with Cajun food you want to go a step further. You want it to be chocolate colored.  Almost to the point of being burnt, but not quite there.

And believe me you’ll know when the roux is burnt, it smells like popcorn when that happens.

It takes forever for you to get to this color and you have to keep stirring until you get there.  So you are going to be stirring the pot for about 30-50 minutes depending on the heat.

This is not a quick meal.

It took almost my entire stream to make it. Well, it did take my whole stream because I totally ended early because I was so tired.

I love the spice in the gumbo, it turned out so well.  You don’t want it too hot, but hot enough to give you some awesome flavor.

Ingredients

  • 1/2 cup olive oil (or canola oil)
  • 3/4 cup flour
  • 1 lb andouille sausage
  • 1 lb shrimp peeled and deveined
  • 2 bell peppers chopped
  • 1 yellow onion chopped
  • 3 stalks celery chopped
  • 2 cups chicken stock
  • 1/2 lb okra
  • 2 tbs garlic powder
  • 1 tbs paprika
  • 2 tbs gumbo file powder
  • 3 tbs cajun seasoning
  • Salt and pepper to taste
  • 3 tomatoes chopped
  • Tomato paste

Instructions

  1. Heat up oil, stir in flour and whisk for 30-50 minutes until the roux is dark brown
  2. Add in all vegetables except the okra, the tomato paste, and cook for 30 minutes
  3. Add seasoning and cook for another 15 minutes
  4. Add in okra and sausage and simmer for 30 minutes
  5. Add in shrimp for another 2 minutes
  6. Serve over rice

 

I need to get some sleep soon. My son has been waking up a couple hours early lately.  And I haven’t been going to bed earlier to make up for it.  So I’m pretty much dead on my feet lately.

Tonight I am going to drink a glass of wine and go to bed early!
