Breakfast Tamale Pie

How has the new year been to you so far?

Mine has been relatively boring, which is good I guess.

I’ve had a lot of time to focus on what I want to bring to the blog in the New Year.

First of all, in the next month or two I will be moving to a new website and host, so MomNoms will have an entirely new look, this is going to be so exciting for me because I’ll be more in control with how it looks, the SEO, and pretty much everything.  I’m hoping that it will help me to pick up speed this year!

Second, I will be launching a meal planning subscription service after the redesign.  Yes, I said it.  I will plan your meals for you and write out a shopping list.  Basically, let me do all of the hard work and you get the groceries and follow directions.  Your family and friends will swear that you’re a professional chef.

Finally, sometime in May, I will be adding a 4 blog a week.  This blog will be strictly on reviewing restaurants and kitchen items.  This will be perfect for people who are local to the Bay Area and those visiting.  Not only that, but it will help you stock your kitchen with what is useful.

What do you guys think of the changes that I’m about to make?

I wanted to start the next series off with a bang, a flavor bang.

For the next few Wednesdays I will be making different casseroles.

They’ll be easy and quick and ready for every weekday meal.

This one is very easy to make and only takes about 40 minutes to make.  That means that you can spend the rest of the time that you would be cooking on something else fun.  LIke more cooking, oh wait that’s just me.

Have you ever heard of a tamale pie?

Do you know what a tamale pie is?

A traditional tamale pie is a taco meat mixture with a cornbread topping.

Is that what I’m going to make?

Kind of.  It has a MomNom’s twist to it though, it’s a breakfast tamale pie.

Complete with a bacon, bell pepper, and potato hash, this is perfect for breakfast or dinner.  It’s also the perfect leftover because it tastes just as good the next day.

I picked this to start off my casserole series because it’s not a traditional casserole and sometimes that’s all you need to make you crave it more.
