I have been so busy with the food blog, that I have not cooked as many ‘professional meals’ as I would like. However, I cooked this amazing beef stew yesterday that was easy, not time consuming, and very good!
The most work you really have to do with it is cutting the vegetables up and that still only took me about 5 minutes. It is called, ‘all of my vegetables are about to expire’ stew. Seriously, I knew I was going to make a stew, but had no idea what I wanted to put in it, until I realized the veggies would be bad pretty quickly. Read on for the recipe!
This week has been so long. Braedon is going through a leap right now, so he pretty much just wants to be near me or on me (or Gareth) at all times. Not only that, he’s grabbing everything in sight.
We went for a walk yesterday, to go view an apartment, that sadly we aren’t getting, and it was raining. I had an umbrella that he kept trying to steal away from me! He is such a curious and active baby.
We went to brunch yesterday and really enjoyed a plethora of food. I love ordering food for Braedon now, because it’s like a new experience for him every time.
This rain is getting me down, guys. I mean, my mood isn’t usually affected by the weather, but something is really killing me the last couple of days here. I know that I need to get out more and the rain makes it hard to do that with a baby.
I really haven’t felt well this week, I just feel off. I want to sleep my days away, because you know, that’s what depression does to you. But I have my little guy to really take care of, so it makes it easier to get out of bed and keep myself healthy these days.
Some people wouldn’t understand that, but when you have a mental health disorder, there are days where you want to hide and nothing can help you. Braedon and Gareth have been the most amazing help that I have ever had. Gareth helps me to see the world clearly, and not all gloom and doom. And Braedon gives me hope, he laughs at me and loves me. It’s a feeling that I never thought I would really have.
If you are ever depressed or have any mental health disorders, know that you are not alone and reach out to someone for help. It really does help to clear the mind when I know that someone is by my side.
Today Gareth got me out of the house. We went to the Ferry Building for a nice little outing for bread and beer. And to try to get Braedon to pass out. Well, he didn’t. But as soon as we got home he fell asleep in my arms, which is why the blog is up so late today. I didn’t get to cooking until almost 7! (I made sausage rolls, so good)
On to the recipe!
I have no time and need to get rid of my veggies beef stew
- 2 Tbs olive oil
- 1 lb of braising steak chopped
- 1 sweet yellow onion quartered
- 3 carrots chopped
- 1 russet potato or 3 small gold potatoes
- 3 stalks of celery
- 5 cloves of garlic smashed and diced
- 1/2 cup chopped parsley
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1 orange bell pepper chopped
- 10 stalks of asparagus chopped
- 1/2 cup of dried black eyed peas
- 1/2 cup of tomato juice
- 2 bay leaves
- 2 cups of bone beef bone broth (or just beef stock)
- 2 Tbs- Rosemary, Thyme, and Sage
- Salt and pepper to taste
- (or use whatever vegetables that you have laying around that sound good in a stew)
- Chop all veggies (This takes the most time)
- Put veggies into large pot and start to saute them down
- Add beef- let simmer for about 10 minutes or until beef is browned
- Add in tomato juice, beef stock, bay leaves, and seasoning
- Bring to a boil and then lower to a small simmer
- Allow to simmer 30minutes-1 hour to allow the flavors to really come together
It's as easy as that! This makes roughly 4 big servings. You can have it in the fridge for 3 days or in the freezer for up to 2 months. Enjoy!
